My 1st Mr Macarons... because they don't wear skirt

After reading so much about macarons, i wanted to make some myself. Not only beacuse it's expensive to buy (they cost between $1.50 to $2.00 each), but they difficult to make too (which makes this fun and challenging). So i made my first macaron yesterday, but i failed...

Firstly i grind the almond together with sugar and cocoa powder, than sieved it. Than i whisked my egg white. I whisked for quite a long time (using hand and not machine, because i don't have one), but it did not form any "stiff peak", just lots of bubble and slightly watery. Than i fold in the dry ingredients. Piped out the batter and left for 10min before baking them. (Each about 1'' diameter).

The first batch i baked at 180 degree for 10min. They burnt! Ouch!

Recipe used for this Macaron

- 50g Ground Almond
- 70g icing sugar
- 10g cocoa powder
- 50g egg white @ room temperature

Taste & Look:

- First batch is burn, therefore taste bitter.

- Second batch taste crispy on the outside and chewy at the inside. But lots of bubble on the surface and NO FEET!!!

What went wrong?

- Maybe due to my eggwhite. It was not whisk properly. They did not form stiff peak when i fold in the dry ingredients.

- My dry ingredients are not dry enough. Because i stored my ground almonds in the fridge, so there were moisture inside.

- I did not rest the piped batter for long enough to form the film on the surface.
I am very disappointed. But it's Ok, i shall try again. I think this is the spirit that i learnt in baking - Patience, Perseverance, Determination and cannot be defeated by failure! I will try again!
